God Våffeldagen

It is Waffle Day in Sweden today. So I made Swedish waffles, both the crispy and egg ones. The recipes and more information is at http://www.swedishfood.com/swedish-food-recipes-desserts/93-waffles

The waffle iron I have was given to me by my grandparents at my college graduation. The photo above is of me on the flat bed of my old Ford truck opening the present. As you can see below, it is showing its age, but it still works.

I made the waffles while streaming Legends of Country on KORD. It has great old country songs every Sunday from 7-10. I made the egg waffle batter first and had it sit in the fridge while I cooked the crisp ones. I got the toppings ready while I waited.

The crispy waffles were a struggle because they stuck. Butter did not help, but our own lard did.

The egg waffles were easier to cook but definitely eggy.

Below are my waffles with crispy ones on the left and egg ones in the right. The crisp ones did not hold our maple syrup well but did fine with the lingonberry preserves. It was all good and decadent for a relaxing Sunday morning.

    We LOVE waffles! Our daughter just made some again yesterday, while my husband and I were away. Ours have to be gluten free, and recently we’ve switched to a paleo recipe which is very tasty. Even my husband says so, and he doesn’t have any of the problems that our daughter and I have!

        It’s on the bag of Bob’s Red Mill Paleo Baking Mix, as pancakes. However, it’s always too thick, so we end up having to add more milk to thin it down a little. Haven’t gotten that down to a science, yet!
